White urad dal is a whole or split urad with its skin removed. These lentils are creamy white in color and have a milder flavor than whole black urad dal. It is very nutritious and rich in protein. It is also extensively used in south indian culinary preparations. Urad dal is one of the key ingredients in making the idli-dosa batter where one part of urad dal is mixed with three or four parts of idli rice to make the batter.
